Scallop Parmesan bites

    An elegant bite to serve before a festive dinner that requires only four ingredients.

    • grated Parmesan cheese
    • olive oil
    • 6 scallops
    • salt and pepper

    1. Preheat oven to 200 C / Gas 6. Sprinkle Parmesan in mini muffin moulds and bake till the cheese has formed a golden brown disk.
    2. Remove from the oven and let cool for several minutes till the cheese hardens. You can make this in advance and store the Parmesan disks in an airtight container.
    3. Heat olive oil in a frying pan and fry scallops for a few minutes on each side. Season lightly with salt and pepper and place a scallop between two disks. Serve immediately.
