Makes: 1 cake
100g caster sugar
100g butter, melted
150g plain flour
1 teaspoon baking powder
2 lemons, juiced and zested
1 orange, juiced and zested

Preheat oven to 220 C / Gas 7.
In a bowl beat sugar and melted butter till light in colour and fluffy. Add eggs and stir well. Add flour and baking powder and mix well.
Stir in lemon juice, orange juice and zests till well combined.
Pour the mixture into a oaf tin and bake in preheated oven till the surface of the cake is golden brown and a knife or skewer inserted in the centre comes out clean, about 45 minutes. Cool for 15 minutes and serve still slightly warm, or let cool completely.
