Ham and cheese mini quiches

    Delicious and easy to make, these mini quiches don't have all the fuss that goes along with pastry but are ideal for drinks party with friends or as a starter along with a salad.

    Makes: 6 mini quiches

    • 3 eggs
    • 200ml milk
    • 200ml double cream
    • 125g plain flour
    • 200g ham, chopped or diced
    • 200g grated cheese, your choice

    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Preheat oven to 200 C / Gas 6.
    2. In a bowl combine eggs, milk, cream and flour. Mix together until smooth. Add ham and grated cheese; stir well.
    3. Evenly distribute the mixture into 10cm mini quiche tins or ramekins and bake for 25 minutes, or until the top of each mini quiche is golden brown.

    My only change was to mix the ham & cheese together with a tiny bit of flour & then straight into the muffin tins. The flour stops the ham & cheese from sinking straight to the bottom & you get an even mix in each quiche. Pour in the egg mix as per the recipe. Delicious 👌  -  30 Apr 2015
