Pastry-free onion tartlets

    Ideal as a starter and for vegetarian dinner parties, these French onion tartlets are easy to prepare and require no pastry!

    Makes: 4 to 6 mini quiches

    • 1 tablespoon oil
    • 2 large onions, sliced
    • 3 eggs
    • 200ml milk
    • 200ml double cream
    • 125g plain flour
    • 100g grated cheese, your choice
    • ground nutmeg to taste
    • salt and freshly ground black pepper to taste

    1. Preheat oven to 200 C / Gas 6. Heat oil in a frying pan over medium heat and fry the onions until they become soft.
    2. Meanwhile in a bowl combine eggs, milk, cream and flour and mix until smooth. Add the grated cheese and stir well.
    3. Place half the onion slices in the bottoms of 10cm tartlet tins or ramekins. Add remaining onion slices to the egg mixture and mix well; adjust to taste with nutmeg, salt and pepper.
    4. Evenly distribute the mixture into the tins and bake in the preheated oven for 30 minutes (the surface of each tart should be golden brown).
