This apple banana compote is loved by my kids. Just the right amount of sweet, but still healthy and full of nutrients. Serve well chilled.

2 tablespoons caster sugar
2 Granny Smith apples - peeled and cut into chunks
2 bananas, sliced

In a saucepan bring sugar and water to the boil. Add the apples and cook, stirring occasionally, until soft; then cover and reduce heat to low and simmer for 15 to 20 minutes while watching that the mixture does not begin to boil.
Add the sliced bananas 5 minutes before removing from heat; stir well.
Pour into a large bowl and mash the apple and banana pieces, leaving the mixture a bit chunky. Transfer to the fridge and serve when chilled.
