Crustless courgette tartlets

    Quick and easy to prepare, these mini tarts are the perfect way to feed green veg to children. So simple to make, requiring no pastry.

    Makes: 6 tartlets

    • 3 eggs
    • 200ml milk
    • 200ml double cream
    • 125g plain flour
    • 180g grated Gruyère cheese
    • salt and freshly ground black pepper to taste
    • 5 small courgettes, washed and sliced
    • fresh chopped parsley, to taste

    1. Preheat oven to 200 C / Gas 6. Grease 6 (10cm) tart tins.
    2. In a bowl combine eggs, milk, cream and flour and mix well until smooth. Stir in cheese and season with salt and pepper to taste.
    3. Pour one third of the mixture evenly into tart tins, then distribute and layer all of the courgette slices in the tins (place side by side, then overlay). Pour remaining egg mixture evenly into tins and sprinkle with parsley.
    4. Bake until the tops of the tartlets are nicely browned, about 25 minutes.
