Preheat oven to 200 C / Gas 6. Heat oil in a frying pan over medium heat and fry the onions until soft.
In a bowl combine eggs, milk, cream and flour; mix until smooth. Add the grated cheese, salt and pepper and stir well. Stir in cooked onions and mix well.
Divide 1/3 of the mixture evenly into 6 mini quiche tins or ramekins. Add even amounts of tomato to each one. Pour remaining egg mixture evenly on top and bake in preheated oven for 25 minutes, or until the surface of each mini quiche is golden brown.
This is a good starting recipe, but rather bland, in my opinion. Besides the pepper, it calls for no spices, so I added some freshly grated nutmeg. I will probably add other herbs as well next time. I also definitely did not need 6 tomatoes (there wasn't enough room in the muffin tin cups), so I put in 4 instead. To be safe, I used gruyere cheese as that is the norm for quiche. Definitely would not call it a disappointment, though! Just needs a few additions. - 05 Feb 2014
