These mini quiches with tomato and onions are very tasty and much less fattening without the pastry.
This is a good starting recipe, but rather bland, in my opinion. Besides the pepper, it calls for no spices, so I added some freshly grated nutmeg. I will probably add other herbs as well next time. I also definitely did not need 6 tomatoes (there wasn't enough room in the muffin tin cups), so I put in 4 instead. To be safe, I used gruyere cheese as that is the norm for quiche. Definitely would not call it a disappointment, though! Just needs a few additions. - 05 Feb 2014
