Quick cheat cottage pie

    Cottage pie made with tinned mince and onion and packet mash. Convenient storecupboard ingredients make this recipe come together quickly.

    Makes: 2 Large portions

    • 2 handfuls frozen peas
    • 1 small tin sliced carrots
    • 1 large tin minced beef and onions
    • 1 beef stock cube (Knorr® Stockpot)
    • 1 tablespoon Bolognese sauce (optional)
    • 1 to 2 teaspoons English mustard
    • 2 tablespoons tomato ketchup
    • salt and pepper to taste
    • 1 packet mashed potato mix (I used Asda® Bubble & Squeak mix)
    • knob butter
    • 1 tablespoon double cream (optional)
    • 400ml boiling water

    1. Preheat the oven to 190 C / Gas 5.
    2. Cook peas in water in microwave until tender, about 8 minutes. Drain and combine with drained carrots and minced beef in a bowl or large jug.
    3. Dissolve stock cube in a small amount of boiled water; stir into mince mixture. Stir in the Bolognese sauce, 1 teaspoon of the mustard and the ketchup. Season with salt and pepper.
    4. Empty the packet of mash mix into a clean bowl or jug, add the butter, the remaining 1 teaspoon mustard and cream.
    5. Boil 400 ml water and whisk well into potato mix until smooth and fluffy, but firm for spreading over meat to prevent seepage.
    6. Transfer mince mixture into ovenproof dish, leaving room for mash layer. Spoon mash mixture across top of mince and spread over, making sure of full coverage. Spread butter over top of mash.
    7. Bake in oven until golden, about 35 minutes.
