Tomato, green bean and balsamic salad

    Delicious side dish best served at room temperature. Can be made ahead a few hours, chilled and brought to room temperature before serving.

    Serves: 2 

    • glug olive oil
    • large handful French green beans, topped, tailed and halved
    • 3 plum tomatoes, sliced
    • salt and pepper to taste
    • 1/2 teaspoon sugar
    • 3/4 tablespoons aged balsamic vinegar

    1. Heat a fry pan with olive oil. Add the beans and cook over medium heat until colour is gained, about 5 minutes.
    2. Add the tomatoes and cook for a further 5 minutes.
    3. Add the salt, pepper, sugar and balsamic vinegar. Turn up the heat and continue to cook for a couple more minutes.
    4. Transfer to a bowl, cool and chill, or leave for 30 minutes before serving.
