Chocolate muffins

    Chocolate muffins make everyone happy! They are lightly sweet, rich with dark chocolate, and very easy to make.

    Makes: 12 muffins

    • 250g plain flour
    • 100g caster sugar
    • 2 teaspoons baking powder
    • 1 pinch salt
    • 180ml milk
    • 150g plain chocolate, cut in small dices
    • 70ml oil
    • 1 egg

    1. Preheat oven to 200 C / Gas 6. Grease a 12-cup muffin tin or line with paper cases. Whisk together the flour, sugar, baking powder and salt in a large bowl.
    2. Place the chocolate and milk in a microwave-safe bowl, and heat in microwave oven until chocolate melts, about 1 minute. Let the mixture cool.
    3. Whisk the oil and egg together. Pour into the flour mixture; pour in the melted chocolate, and stir just until the dry ingredients are moistened. Fill muffin cases 2/3 full.
    4. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 20 minutes.

    Quick to make and nice taste but they are very dry, it says to leave in for about 20, I only but them in for about 15 and still dry!  -  14 Oct 2013
