About this recipe: A sweet crispy fritter, ideal as a base for many starters, including my favorite Coriander and chilli scallops.

Serves: 4 

  • 3 to 4 carrots
  • 1/2 white onion
  • 1 egg
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • salt and pepper to taste
  • oil for frying

  1. Clean and grate carrots and onion, then strain using a clean tea towel or a ricer to remove as much moisture as possible.
  2. Place mix in a bowl and add egg and spices, season with salt and pepper; mix well.
  3. Heat veg oil in a frying pan. Shape mixture using a round biscuit cutter. Press firmly to approx 1cm thick.
  4. Place in oil and fry until golden brown and crispy, 3 to 4 minutes on each side. Place on kitchen paper to drain.


These fritters will keep in a warm oven for 15 to 20 minutes.
