Chicken breasts with tomato and spinach

    My favourite healthy dish! It has very few calories, it's super good, easy, fits my budget and pleases everyone with the lovely presentation.

    Ingredients
    Serves: 4 

    • 5 tablespoons olive oil
    • 4 chicken breast fillets
    • 1kg fresh tomatoes, chopped
    • 5 sprigs fresh thyme
    • 500g fresh spinach leaves
    • salt and freshly ground black pepper

    Method

    1. Heat 2 tablespoons of the olive oil in a frying pan over medium high heat, and cook the chicken fillets, turning often, until they are golden, no longer pink in the centre and juices run clear.
    2. Meanwhile, heat 2 tablespoons of the olive oil in a casserole over medium high heat and cook and stir the tomatoes and thyme sprigs until tomatoes are tender, about 10 minutes.
    3. In another pan, heat the remaining 1 tablespoon of the olive oil over low heat. Cook and stir the spinach until wilted and any liquid evaporates, about 5 minutes.
    4. Serve the chicken fillets, tomatoes and spinach in separate dishes. Season each dish to taste with salt and freshly ground black pepper.
