About this recipe: The flavour of fresh, plump garden tomatoes is enhanced by a brief simmer with fragrant thyme sprigs.


Serves: 4 

  • 3 tablespoons olive oil
  • 1kg fresh tomates, diced
  • 10 sprigs fresh thyme

  1. Heat the olive oil in a pan over low heat, stir in the tomatoes and thyme and cook, uncovered, until tomatoes break down, about 10 minutes.

Presentation suggestion

Garnish with additional branches of fresh thyme.
