4 carrots, peeled and chopped
1 turnip, peeled and chopped
1 broccoli, chopped
170g green beans (fresh or frozen), halved
3 potatoes, peeled and chopped
2 vegetable stock cubes
salt and ground black pepper

Bring the water and salt to the boil in a large saucepan.
Add the carrots, turnip, broccoli, green beans, potatoes and the stock cubes to the boiling water. Stir, cover, reduce the heat to medium and let cook until vegetables are very tender, about 40 minutes.
Pour off and reserve about 250ml of the liquid, and blend the soup with a hand blender until smooth. Adjust the thickness of the soup by adding back reserved liquid as needed. Season to taste with salt and pepper.
