About this recipe: As either a vegetarian main dish or as a side dish, I like to serve this either way. I just add more mushrooms and asparagus when it is the main dish.


Serves: 4 

  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 500g white mushrooms, sliced
  • 1 bunch white or green asparagus, trimmed
  • 5 sprigs fresh thyme
  • salt and ground black pepper

  1. Bring a pan of salted water to the boil.
  2. Meanwhile, heat the olive oil in a large frying pan over medium heat, and cook and stir the onion, shallot and garlic until the onion is translucent, about 5 minutes. Add the mushrooms and continue cooking until the mushrooms are lightly browned, about 5 minutes.
  3. When the mushrooms are nearly done, add the asparagus to the boiling water and cook until just tender, about 4 minutes. Drain.
  4. Add the asparagus to the frying pan with the mushrooms, sprinkle with fresh thyme leaves and season to taste with salt and pepper. Serve immediately.

A nice healthy side-dish, which was very tasty with some mashed potatoes! The only modification I made was to use 2 onions instead of an onion and a shallot. We have very uncultured tastes and consider one allium to be as good as another, so I can't say we noticed a difference. I'm sure I will be making this again :-) - 04 Jan 2013
