Mango and chicken rolls

    Filo pastry savoury rolls with chicken and chutney of your choice to flavour. Serve hot or cold, good with some salad.

    Makes: 4 rolls

    • 110g mango or any flavour chutney
    • 1 tablespoon sour cream
    • 2 spring onions, sliced
    • 8 sheets filo pastry
    • 4 chicken breasts
    • 60g melted butter

    1. Preheat the oven to 190 C / Gas 5.
    2. Put chutney, sour cream and spring onions in a bowl and mix well.
    3. Place a couple of sheets of filo down and place chicken on top in the middle.
    4. Spoon mix onto chicken and roll pastry around to create a parcel. Repeat for other chicken breasts.
    5. Place on a greased baking tray and brush with butter.
    6. Bake in the preheated oven until the chicken is no longer pink at the centre and the pastry is golden, about 20 minutes.


    Any leftover mix makes a good tortilla dip.
