1kg courgettes, sliced
200ml double cream
20g butter
salt and freshly ground black pepper to taste

Bring a large pan of water to the boil. Add courgettes and cook for about 10 minutes, or until tender. Drain well and return to the pan.
Purée the still-warm courgettes with a hand-held blender, then add cream and butter and blend until mixture is smooth and creamy. Season with salt and pepper to taste before serving.
