Marbled chocolate cake

    This marbled sponge cake is delicious and very simple to prepare. Keeps well in an airtight tin for a few days.

    Makes: 1 cake

    • 100g caster sugar
    • 100g butter, softened
    • 3 eggs
    • 150g plain flour
    • 1 teaspoon baking powder
    • 200g plain chocolate

    1. Preheat oven to 180 C / Gas 4; lightly grease a loaf cake tin.
    2. Beat sugar and softened butter together until the mixture becomes light and fluffy. Add the eggs and mix well. Beat in flour and baking powder; separate the cake mixture into two equal amounts in two different bowls.
    3. Melt chocolate in double boiler or microwave; allow to cool slightly. Fold melted chocolate into one of the cake mixtures. Pour the two mixtures alternately into prepared cake tin to create a marble effect.
    4. Bake in preheated oven for 50 to 60 minutes or until a skewer inserted in the centre comes out clean. Let cool for 15 minutes and serve warm.
