Lamb shank casserole

    Lamb shanks cooked to perfection in the pressure cooker. You'll get slow cooked casserole flavour in less than an hour with this recipe!

    Serves: 4 

    • 4 tablespoons olive oil, divided
    • 2 onions, finely chopped
    • 1 clove garlic, minced
    • 2 tablespoons fresh thyme leaves
    • 2 tablespoons chopped fresh oregano
    • 1 pinch chopped fresh rosemary
    • 1 pinch chopped fresh dill (optional)
    • 4 lamb shanks
    • 200ml red wine
    • 150ml meat stock, your choice
    • 2 bay leaves
    • salt and freshly ground pepper to taste

    1. In a bowl combine 2 tablespoons olive oil with onion, garlic and herbs. Add lamb shanks and toss to coat with the marinade, then cover and refrigerate for 2 hours.
    2. In a frying pan heat 2 tablespoons olive oil; remove lamb shanks from marinade and brown in oil, then add to the pressure cooker.
    3. Pour remaining marinade into hot frying pan and add the red wine and stock. While stirring, heat the mixture until it simmers and pour into the pressure cooker over the lamb. Remove bay leaves.
    4. Close pressure cooker and cook on high heat until the valve whistles; turn heat down to low and cook for another 10 to 15 minutes before releasing pressure.
