Leek and bacon tart

    Simple, rustic French fare at its best, this tart is so simple to make. If you'd like something more rich and luxurious, try topping the tart with grated cheese before baking.

    Makes: 1 tart

    • 1 sheet shortcrust pastry
    • 200g bacon
    • 1kg leeks - rinsed, drained and sliced
    • ground black pepper to taste
    • 3 eggs
    • 250ml single cream
    • 1 handful fresh chopped parsley

    1. Roll out the pastry and line a 23cm pie dish or tart tin; cover then refrigerate.
    2. In a skillet, sauté the bacon for 2 to 3 minutes then add the leeks. Cook and stir 4 to 5 minutes and season with pepper to taste.
    3. Preheat oven to 220 C / Gas 7.
    4. In a bowl beat the eggs, then add cream and parsley and stir well. Gradually add to bacon leek mixture and stir together, then pour mixture into chilled pastry case.
    5. Bake in preheated oven for 35 to 40 minutes, until lightly browned on top. Serve hot.
