Roast pork and carrots with white wine sauce

    Beautiful French recipe for tender pork loin roast with carrots, flavored with herbs de Provence and white wine. You can changing the accompaniment of the pork to potatoes, courgettes, or a combination of your favourite roast veg.

    Serves: 4 

    • 600g boneless pork loin, cut into large pieces
    • 2 tablespoons olive oil
    • 500g carrots, peeled and sliced
    • 200ml water
    • 1 tablespoon fresh chopped parsley
    • 3 tablespoons herbes de Provence
    • 250ml white wine
    • salt and freshly ground black pepper to taste

    1. Preheat oven to 200 C / Gas 6.
    2. Arrange the pork in a 23x30cm baking dish and cover with olive oil. Add the carrots and stir together until well coated with the oil. Pour in water and sprinkle with parsley and herbs, then mix all together and roast in preheated oven for 30 minutes.
    3. Remove from oven, stir and pour in wine. Stir again and put the dish in the oven for another 5 minutes, covering with aluminium foil if necessary (for the top not to burn).
    4. Season with salt and pepper to taste and serve hot.
