2 large or 3 small courgettes, halved lengthways
100g sausage, casings removed
100g minced beef or pork
2 skinless chicken breast fillets, chopped
1 tablespoon fresh chopped parsley
salt and freshly ground black pepper to taste

Preheat oven to 180 C / Gas 4. Cut each courgette half into two or three pieces (depending on the length) and put pieces in a greased 23x30cm baking dish.
In a bowl mix the sausage meat, minced meat, chicken and parsley. Mix with your hands until mixture has a smooth and compact texture. Form small heaps of stuffing and place on the courgette pieces; season with salt and pepper to taste.
