About this recipe: The entire family is sure to enjoy their veg when it's stuffed with this delicious mixture of sausage, mince and chicken. A great use of courgette when in season. Serve with rice, quinoa or bulgur wheat.


Serves: 4 

  • 2 large or 3 small courgettes, halved lengthways
  • 100g sausage, casings removed
  • 100g minced beef or pork
  • 2 skinless chicken breast fillets, chopped
  • 1 tablespoon fresh chopped parsley
  • salt and freshly ground black pepper to taste

  1. Preheat oven to 180 C / Gas 4. Cut each courgette half into two or three pieces (depending on the length) and put pieces in a greased 23x30cm baking dish.
  2. In a bowl mix the sausage meat, minced meat, chicken and parsley. Mix with your hands until mixture has a smooth and compact texture. Form small heaps of stuffing and place on the courgette pieces; season with salt and pepper to taste.
  3. Bake in preheated oven for 45 minutes. Serve hot.
