Halibut with rosemary, lemon and Chinese five spice
This halibut recipe is simple and full of great flavour. I love the taste of Chinese five spice with fish and seafood.

2 tablespoons olive oil
600g fresh halibut
1 sprig fresh rosemary
1 teaspoon Chinese five spice
1 lemon, juiced

Heat the olive oil in a frying pan over medium high heat, and add the halibut and rosemary. Cook the fish until it is lightly golden, opaque in the centre and flakes easily with a fork, about 5 minutes each side.
Remove from the heat and sprinkle with five spice. Sprinkle on the lemon juice; add the butter on top. Return the pan to the heat until the butter melts, about 2 minutes more. Serve immediately.
