Creamy Chocolate Truffles

    Serves: 6 

    • 250g good dark chocolate
    • 180ml double cream
    • drop of vanilla extract
    • 30g butter
    • cocoa powder

    1. Melt the dark chocolate in a double boiler. Remove from heat and cool slightly.
    2. Meanwhile, slowly simmer cream with a bit of vanilla, then allow to cool.
    3. Beat butter till fluffy.
    4. Combine chocolate, cream and butter. Stir well.
    5. Refrigerate till firm, about 2 hours. Using a small spoon, form into balls, then roll in cocoa powder. Store in fridge.
