Anizou's chocolate ganache

    To make this ganache which I use in many of my desserts, I buy a high-quality plain chocolate with at least 60% cacao.

    Serves: 4 

    • 250g dark chocolate - minimum 60% cacao, finely chopped
    • 100ml whipping cream
    • 75g caster sugar

    Prep:5min  ›  Cook:10min  ›  Extra time:5min cooling  ›  Ready in:20min 

    1. Heat a small saucepan over very low heat and melt the chocolate, stirring gently.
    2. Stir in the cream and caster sugar, and continue to stir until smooth. Use the ganache before it is completely cool, or it will solidify.
