Apple pear cake

    A delicious, soft cake that comes from my mum. Serve it warm or cold with a scoop of apple or pear sorbet - so elegant! I use a Golden Delicious apple for this recipe.

    Serves: 6 

    • 3 eggs
    • 75g butter, melted
    • 100g caster sugar
    • 150g plain flour
    • 1 tablespoon baking powder
    • 1 apple, peeled and chopped
    • 1 pear, peeled and chopped

    1. Preheat the oven to 180 C / Gas 4. Butter a 20cm cake tin or loaf tin, or line with baking parchment.
    2. Whisk together the eggs, melted butter, caster sugar, flour and baking powder until smooth and creamy. Stir in the apple and pear. Pour into the prepared cake tin.
    3. Bake in the preheated oven until a skewer inserted near the centre comes out clean, 25 to 35 minutes. Allow to cool in the tin for 5 minutes, then remove to cool completely on a wire rack.

    hi this is a lovely recipe used all pears and no apple.  -  20 Oct 2014


    This turned out really well, better than I expected. Very light and airy, not dense like some other fruit based cakes. I did tweak it a bit, I used 170g plain flour and 20g cornflour. Highly praised by Mr Cakeaholic too!  -  11 Apr 2014


    Yummy recipe! Added 25g of cocoa powder and a teaspoon of cinnamon and baked for 45mins on 160 C (fan assisted oven). It came out very light and moist. Will definitely be baking this again!  -  06 Feb 2016
