Quick marinated chicken breasts

    Chicken breast fillets, cut into cubes and marinated in a tangy sauce, cook quickly in a frying pan. This recipe is also perfect for preparing chicken for the barbecue - just thread the chicken cubes onto skewers.

    Serves: 4 

    • 4 tablespoons olive oil
    • 2 tablespoons cider vinegar
    • 1 1/2 tablespoons soy sauce
    • 3 tablespoons water
    • 1 clove garlic, minced
    • 1 tablespoon minced fresh parsley
    • 4 chicken breast fillets, cubed

    1. Whisk together 3 tablespoons of the olive oil, cider vinegar, soy sauce, water, garlic and parsley. Stir in the chicken pieces, and marinate at room temperature for 10 minutes.
    2. Heat the remaining 1 tablespoon olive oil over medium high heat in a frying pan. Drain the chicken, and cook and stir until no longer pink in the centre, about 5 minutes.
