50g grated Gruyère cheese
5 slices dry cured ham or prosciutto, thinly sliced
5 cherry tomatoes, halved
3 fresh basil leaves, thinly sliced

Whisk the eggs in a bowl for 2 minutes. Season with salt and pepper.
Pour 1 tablespoon of olive oil into a frying pan and wipe out the excess with kitchen paper. Heat the pan over medium heat, pour in the eggs and cook until set, 5 to 7 minutes.
Sprinkle the omelette with the grated Gruyère, and distribute the ham slices, cherry tomatoes and basil over the top. Return to the heat just until the cheese melts, about 2 minutes.
