Omelette pizza

    One night, my children were asking for pizza for dinner. I agreed, but I had an evil plan - this omelette has the allure of a pizza but is still a delicious omelette. The kids loved my idea.

    Serves: 4 

    • 6 eggs
    • salt and ground black pepper
    • 1 tablespoon olive oil
    • 50g grated Gruyère cheese
    • 5 slices dry cured ham or prosciutto, thinly sliced
    • 5 cherry tomatoes, halved
    • 3 fresh basil leaves, thinly sliced

    1. Whisk the eggs in a bowl for 2 minutes. Season with salt and pepper.
    2. Pour 1 tablespoon of olive oil into a frying pan and wipe out the excess with kitchen paper. Heat the pan over medium heat, pour in the eggs and cook until set, 5 to 7 minutes.
    3. Sprinkle the omelette with the grated Gruyère, and distribute the ham slices, cherry tomatoes and basil over the top. Return to the heat just until the cheese melts, about 2 minutes.

    Serving sugggestion

    Serve with a green salad or steamed vegetables.
