Abbie's super soft chocolate cookies

    This is a fairly modified version of another great recipe on here. My family love these as they are so soft and chocolaty! Enjoy!

    Makes: 12 cookies

    • 145g butter or margarine
    • 120g fairtrade (optional) demerara sugar
    • 75g granulated or caster sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 225g self-raising flour
    • 40g cocoa powder (I recommend Cadbury® Bournville)
    • 24 squares Cadbury® milk chocolate (optional)

    1. Preheat the oven to 180 C / Gas 4. Grease two trays with butter and then add baking paper (optional). You may need three trays as it depends on how big or small you want them to be.
    2. Cream the butter and both sugars until you get a nice light and fluffy mixture.
    3. Then add the egg and the vanilla extract. Mix and then stir in the flour and cocoa powder. If the mixture is a little wet, add some more flour.
    4. If you have chocolate, cut the chunks in half and then add them to the mixture. Stir until everything is mixed in.
    5. Take little bit of the mixture and roll them into balls. You should manage around 6 on a tray with about an 8cm gap between them.
    6. Place in the oven for around 8 minutes, but check them quite frequently. Don't let them go hard in the oven, take them out while soft and leave them to cool.
