Basic ratatouille

    This ratatouille always reminds me of good food and sunny weather. Ratatouille is a perfect use of summer veg!

    Serves: 4 

    • 3 tablespoons olive oil
    • 1 onion, finely chopped
    • 4 cloves garlic, minced
    • 1 large aubergine, cut into slices
    • 1 large (or 2 small) courgette, cut into slices
    • 500g chopped tomatoes
    • 1 pepper, cut into strips
    • 1 tablespoon herbes de Provence
    • salt and pepper to taste

    1. In a large saucepan, heat the olive oil and cook the onion and garlic over low heat for 5 minutes, until soft.
    2. Add the remaining ingredients and simmer for 20 minutes. The vegetables will release their liquids and create a lovely sauce. Simmer covered until veg is tender. Remove the lid and simmer uncovered if there is too much liquid.

    Perfect! Such a good way to use up peppers and aubergine that you have in the fridge and are just starting to soften! I used some of it for vegetable lasagne.  -  27 Nov 2015


    It was very good, I didn't have quite enough chopped tomatoes so added water and tomato puree to make the difference, bad decision. I'm making it again with more chopped tomatoes and no onion, garlic and herbs because the flavours were too overpowering for me. Over all a very good recipe  -  14 Oct 2014
