About this recipe: Ideal for summer suppers, chicken pieces baked in a beautiful marinade of lemon, garlic, herbs and olives. I also add baked potatoes mixed with a little oil, garlic, salt and pepper and serve with a green salad.


Serves: 4 

  • 3 cloves garlic, peeled and chopped
  • 4 tablespoons olive oil
  • 3 sprigs rosemary
  • 1 lemon, sliced
  • salt and freshly ground black pepper
  • 1 whole chicken, cut into pieces
  • some black olives, preferably Kalamata

  1. In a bowl mix together the garlic, oil, rosemary, lemon slices, salt and pepper. Place chicken pieces in a 20x30cm glass baking dish. Add marinade and olives. Mix together until chicken is well coated. Cover and refrigerate for at least an hour to marinate.
  2. Preheat oven to 200 C / Gas 6 and bake chicken for about an hour.
