Ideal for summer suppers, chicken pieces baked in a beautiful marinade of lemon, garlic, herbs and olives. I also add baked potatoes mixed with a little oil, garlic, salt and pepper and serve with a green salad.
In a bowl mix together the garlic, oil, rosemary, lemon slices, salt and pepper. Place chicken pieces in a 20x30cm glass baking dish. Add marinade and olives. Mix together until chicken is well coated. Cover and refrigerate for at least an hour to marinate.
Preheat oven to 200 C / Gas 6 and bake chicken for about an hour.
