Egg free chocolate custard

    Here is a recipe for egg free chocolate custard or cream, but using agar agar. Agar agar is a natural compound that is extracted from red algae (its commercial form is a white powder). Its main property is that it gels on contact with water, so it can be used instead of eggs and cream to make recipes friendly for anyone on a special diet!

    Serves: 4 

    • 1/4 teaspoon agar agar
    • 40g unsweetened cocoa powder
    • 500ml skimmed milk
    • 50g caster sugar

    1. Mix agar agar and cocoa together in a small bowl. Warm milk slowly in a saucepan, adding agar agar mixture gradually while stirring vigorously. Bring to the boil and let boil for 2 to 3 minutes while stirring. Reduce heat and stir in sugar.
    2. Pour into four ramekins and let cool for 10 minutes at room temperature. Chill in the fridge for 2 hours before serving.
