Easy French roast chicken

    A fresh twist on the classic roast chicken, stuffed with a creamy fromage frais cheese and herb mixture before roasting. Makes a moist, beautiful bird for an easy family supper.

    Serves: 6 

    • 60g fromage frais
    • 2 tablespoons herbes de Provence
    • salt and ground black pepper to taste
    • 1 (1.5kg) whole chicken
    • 4 tablespoons oil

    1. Preheat oven to 220 C / Gas 7.
    2. In a bowl mix fromage frais with herbs de provence; season with salt and pepper and stuff the chicken with this mixture. Brush chicken with oil and place on rack of a roasting tin.
    3. Roast for 1 hour 20 minutes, brushing with oil regularly; turn chicken over halfway through cooking. Chicken is cooked when no longer pink inside and juices run clear.
    4. Deglaze roasting tin on the hob over medium high heat with boiling water, scraping up the bits on the bottom. Serve sauce alongside roast chicken.
