Carrot remoulade

    This remoulade is pepped up with carrots and can be served as a dip for veg, or like regular remoulade with fish or meat.

    Serves: 2 

    • 1 teaspoon prepared mustard
    • 1 shallot
    • 1 teaspoon capers
    • 1 cornichon
    • 4 tablespoons mayonnaise
    • 4 carrots, peeled
    • fresh minced herbs of your choice
    • pepper

    1. Place mustard, shallot, capers and cornichon in your food processor. Puree then add mayonnaise.
    2. Grate carrots and mix them with the remoulade and herbs. Season with salt and pepper to taste. Refrigerate for 1 to 2 hours before serving.
