About this recipe: Make your taste buds travel with these delicious, deluxe bruschetta with garlic, mozzarella, tomato and truffle olive oil! Lovely light snack or meal, accompanied with a green salad.


Serves: 2 

  • 1 baguette
  • 1 clove garlic
  • 1 large tomato, sliced
  • 1 large ball fresh buffalo mozzarella, sliced
  • truffle-flavoured olive oil

  1. Start by cutting slices of bread and place under grill to toast (keep an eye so it doesn't end up smoking and charred - yes, it's happened before!).
  2. Once bread is toasted, cut garlic clove in half and gently rub toast with garlic. Top each bread slice with tomato and mozzarella.
  3. Drizzle bruschetta with oil, and enjoy!
