About this recipe: Fillets of sole, baby carrots and leeks make this a healthy, super delicious and quick midweek supper dish!


Serves: 4 

  • 3 to 4 tablespoons olive oil
  • 1 bunch baby carrots, sliced
  • 2 leeks, thinly sliced
  • 4 sole fillets
  • salt and ground black pepper to taste
  • 2 sprigs fresh parsley, chopped

  1. Put olive oil into a frying pan over low heat. Add chopped carrots and leeks and cook for 5 minutes.
  2. Place the fillets on the vegetables, season with salt and pepper then cover and cook for 10 minutes to gently steam the fish.
  3. Sprinkle with chopped parsley and serve immediately.
