Easy cherry clafoutis

    A traditional cherry clafoutis is baked with the stones right in - making it all the easier for you! If serving to kids, or for dinner party guests, you might want to remove the stones, however. Delicious and easy!

    Serves: 6 

    • 1kg ripe black cherries, washed and stemmed
    • 60g plain flour
    • 125g icing sugar
    • 3 eggs
    • 200ml milk
    • 250ml double cream
    • a pinch of salt

    1. Preheat oven to 180 C / Gas 4.
    2. Arrange cherries in the bottom of a buttered 20x30cm baking dish.
    3. In a bowl combine flour, 100g of the icing sugar and salt. Gradually mix in the eggs, milk and cream. Pour mixture over cherries and bake about 45 minutes, until the top of the clafoutis is golden.
    4. Sprinkle with remaining icing sugar before serving; serve warm or cold.
