I usually use sausage for stuffed tomatoes, but I was out and used beef mince instead. The result was delicious! You can embellish the stuffing as you wish, with chopped onion, garlic, fresh herbs, spices, etc.

Ingredients
Serves: 4
8 tomatoes, tops sliced off and reserved
250g beef mince
salt and ground black pepper to taste

Preheat the oven to 220 C / Gas 7.
Scoop pulp out of tomatoes and put in a saucepan. Add beef mince and cook for 10 minutes over medium low heat, stirring, till beef is cooked through and no longer pink.
Stuff tomatoes with beef mixture and place upright in a baking dish, placing snugly so that they won't fall while baking.
Bake in preheated oven for 10 minutes and serve hot.
