Cherry yoghurt cake

    A moist yoghurt cake studded with dried cherries. Using yoghurt means you can cut down on oil. On holiday, we bought dried cherries and I put them in a cake scented with almond, and here's the recipe! A sweet treat that makes a nice alternative to other fruit cakes.

    Serves: 8 

    • 100g dried cherries
    • 200g plain flour
    • 120g caster sugar
    • 3 eggs, beaten
    • 1 teaspoon baking powder
    • a pinch of salt
    • 50ml vegetable oil
    • 125g natural yoghurt
    • 1 teaspoon almond extract

    1. Preheat oven to 180 C / Gas 4. Dredge the cherries in a bit of the flour to keep them from sinking in the cake during baking.
    2. In a bowl combine sugar and eggs, then stir in the flour, baking powder and salt. Add the oil, yoghurt, floured cherries and almond extract and mix till smooth.
    3. Spoon mixture into a greased 900g loaf tin and bake in preheated oven for about 45 minutes (or until a skewer inserted in the centre of the cake comes out clean.)

    This recipe has now been amended to 50ml of oil instead of the earlier 500ml of oil.  -  23 Jul 2013


    This recipe contains too much oil, I'd day about a quarter of a litre too much oil - the cake roasts rather than bakes! I love almonds, but even for me the amount of almond extract makes the flavour overpowering. I'd say try the recipe, but not as it is - revise the oil and almond extract quantities down.  -  14 Jul 2013


    This recipe is a complete DISASTER I am surprised I didn't set the house on fire. Way Way TOO MUCH OIL. Beware!!!!  -  19 May 2013
