About this recipe: If you love ribs but fancy trying something new, try this simple French recipe for ribs from Provence.


Serves: 6 

  • 1 rack of pork ribs, no longer than your roasting tin
  • salt and freshly ground black pepper to taste
  • 2 tablespoons herbes de Provence
  • 3 to 4 tablespoons olive oil

  1. Preheat the oven to 180 C / Gas 4. Lay a large sheet of aluminium foil on a baking tray (shiny side facing up) and lightly grease with olive oil.
  2. Place rack of ribs on baking tray, bone side down. Generously sprinkle the salt, pepper and herbes de Provence over the entire length.
  3. Drizzle with olive oil.
  4. Wrap ribs in foil, then another piece of foil; if the foil is not wide enough, tightly 'tent' pieces of foil over the baking tray, so that the meat does not dry out.
  5. Bake in preheated oven for 2 to 2 1/2 hours. No need to monitor cooking or basting - everything happens automatically!
