Cos, veg and almond salad


    Crisp and crunchy cos lettuce tossed with carrots, tomatoes, red onion and almonds in a light vinaigrette. Delicious!

    Serves: 4 

    • 2 cos lettuces, chopped
    • 2 carrots, grated
    • 2 small plum tomatoes, finely chopped
    • 1 small red onion, diced
    • 2 to 3 tablespoons flaked or chopped almonds
    • 4 tablespoons olive oil
    • 3 tablespoons balsamic vinegar
    • 2 tablespoons water
    • 1 tablespoon fresh chopped parsley
    • salt and freshly ground black pepper

    1. In a large bowl combine the lettuce, carrots, tomatoes and onion. Toss together and top with almonds.
    2. In a small bowl combine oil, vinegar, water, parsley, salt and pepper. Whisk together, pour over salad and serve.
