Best chocolate cupcakes

    A tried and true chocolate cupcake, made with melted cooking chocolate for incomparable results! No need for icing, but your favourite buttercream will work a treat.

    Serves: 6 

    • 60g butter
    • 125g cooking chocolate, chopped
    • 2 tablespoons plain flour
    • 1/2 teaspoon baking powder
    • 3 eggs, separated
    • 125g caster sugar

    1. Preheat oven to 180 C / Gas 4. Grease muffin tins or line with paper cases.
    2. Melt butter and chocolate in a saucepan over medium heat, stirring. Remove from heat and add flour, then baking powder. Add egg yolks and sugar and mix well, until mixture has the consistency of a smooth paste.
    3. Beat egg whites until stiff peaks form, then fold into mixture and mix well.
    4. Fill each case 2/3 full and bake in preheated oven for 30 minutes.

    I think that this recepie is really good for baking cupcakes and I also doubled all the ingrdients and made one of the best chocolate cakes I've ever eaten!  -  27 Dec 2014
