Easy and quick to do, these tuna rillette starters are refreshing and perfect for a cocktail with friends.

Makes: 12 rillettes
1 (185g) tin tuna chunks in water, drained
salt and freshly ground black pepper to taste
1 tomato, cut into small pieces
1 tablespoon lemon juice
1 tablespoon chopped fresh dill

In a medium bowl combine tuna with mayonnaise and mix together. Season with salt and pepper then add tomato, lemon juice and dill. Mix well, cover and refrigerate for at least 30 minutes. Serve on toast.
