Chocolate almond biscuits

    Little chocolate biscuits made with ground almonds are perfect to accompany your coffee or tea, and they are delicious still warm from the oven.

    Serves: 4 

    • 2 eggs
    • 150g caster sugar
    • 90g dark chocolate, grated
    • 20g unsweetened cocoa powder
    • 75g plain flour
    • 100g ground almonds

    1. Preheat the oven to 190 C / Gas 5. Line a baking tray with baking parchment.
    2. Beat the eggs with the sugar in a bowl until pale and creamy. Stir in the grated chocolate, cocoa, plain flour and ground almonds. Form the dough into a ball, cover with cling film and refrigerate for at least 20 minutes.
    3. Form the dough into small balls, and place on the prepared baking tray. Flatten each ball slightly with the palm of your hand.
    4. Bake in the preheated oven until firm to the touch, about 15 minutes.

    Well, not sure the quantities are correct on this recipe because there's no way my mixture was anything like a "dough"! I added quite a bit ore flour in the end and ended up with a kind of "rock bun" mix (nice but not what I was expecting/aiming for)  -  08 Mar 2013


    The biscuits turned out well had to add extra flour to make it dough like. My husband loved the end result  -  28 Apr 2016


    Delicious! I must have eaten half the cookie dough which was just too yummy. With what was left I made 15 cookies! I read people's notes , so went slow on the liquid. On the end one egg (Yes the whole egg) and a teaspoon of vanilla (i was out of cocoa) was enoigh. Am making them again tonight!  -  01 Oct 2015
