Sausage stuffed veal roulades

    This recipe is super easy to do for a dinner party, and impresses guests! You'd think it would take hours, while it really takes 20 minutes! I love it.

    Serves: 4 

    • 250g sausages, casings removed
    • 25g mixed chopped fresh herbs (like parsley and chives)
    • salt and freshly ground black pepper
    • 4 veal escalopes, pounded 1cm thin
    • 1 tablespoon olive oil
    • 750ml dry apple cider

    1. Combine sausagemeat with fresh chopped herbs in a mixing bowl; season with salt and pepper and mix well.
    2. Spoon 1/4 of the sausage mixture onto the bottom end of each veal escalopes and roll up (with mixture inside). Skewer to hold together.
    3. Heat olive oil in a frying pan over low heat. Place veal roulades in pan and pour cider over them. Simmer for 15 minutes uncovered and serve with vegetables of your choice.
