French pineapple cake

    A gorgeously moist pinappple cake made with tinned pineapple. A recipe from my mum, this cake is so delicious and fluffy that we forget to stop eating it when we should!

    Serves: 6 

    • 12 sugar cubes
    • 4 eggs
    • 150g caster sugar
    • 150g plain flour
    • 100g butter, melted
    • 1 teaspoon baking powder
    • a pinch of salt
    • 125g tinned pineapple slices in juice

    1. Put sugar cubes in a small bowl with a bit of water to soak and soften; set aside.
    2. Preheat oven to 150 C / Gas 2.
    3. In a large bowl beat eggs with caster sugar. Add flour, melted butter, baking powder and salt and mix well, to a smooth paste; set aside.
    4. Put soaked sugar cubes in a 23cm round cake tin with high edges. Melt cubes over medium heat and cook, stirring, until caramelised. Rotate tin to coat bottom and sides with caramelised sugar.
    5. Drain pineapples, but save juice. Arrange pineapple slices in bottom of tin and top with cake mixture.
    6. Bake in preheated oven for 30 minutes. Let cool for a few minutes before unmoulding. Pour saved pineapple juice all over cake to moisten; cool and serve.
