Veal roulades with green beans

    Tender veal escalopes surround succulent pork sausagemeat, and are served over a bed of steamed green beans.

    Ingredients
    Serves: 2 

    • 2 sausages
    • 2 veal escalopes
    • 500g green beans, trimmed
    • 3 tablespoons olive oil

    Method
    Prep:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Remove the sausage casings and put the sausagemeat in the centre of each veal escalope. Roll up the veal around the sausage and tie with cooking string.
    2. Heat the olive oil in a frying pan and cook the roulades, turning often, until browned and until sausage is fully cooked, about 10 minutes.
    3. Meanwhile, bring a pan of salted water to the boil, and cook the green beans until tender, about 10 minutes. Drain and serve with the veal.
