Cut woody ends and old leaves from broccoli.
Blanch broccoli by plunging into a pan of boiling water, cover and reduce heat - boil for 2 minutes then drain and run under cold water, set aside.
Heat oil in a wok or a frying pan, when oil has heated - add broccoli and garlic then cook for a few minutes - stirring frequently until broccoli is crispy around the edges. Season with salt and pepper.
