Grilled pineapple with cinnamon yoghurt

    Refreshing dessert - fresh pineapple slices grilled with brown sugar and served with cinnamon spiced yoghurt.

    • 4 (1cm) slices fresh pineapple
    • 5 teaspoons light brown soft sugar
    • 4 tablespoons low fat natural yoghurt
    • 2 teaspoons ground cinnamon
    • fresh mint

    1. Turn the grill on to high.
    2. Lay the pineapple slices on a baking tray and grill for 4 minutes.
    3. Turn and sprinkle the other side of each pineapple slice with 1 teaspoon light brown sugar. Grill until the sugar is bubbling and the pineapple is heated through.
    4. Meanwhile, mix the yoghurt with the remaining 1 teaspoon sugar and the cinnamon.
    5. Plate up the pineapple and garnish with a tablespoon of the cinnamon yoghurt and chopped fresh mint.
