Preheat a barbecue for medium high heat.
Place the lemon slices and mint leaves under the skin of the chicken fillets. Brush the outside of the chicken breast fillets with olive oil. Season with salt and pepper.
Barbecue the chicken until nicely browned and the juices run clear, about 5 minutes per side.
